We at Deal of the Day have seen a steady stream—nay, make that a torrent—of Las Vegas deals cross our desks since this blog debuted back in March. And they're still coming. So much, that we thought it best to offer an ongoing series of roundups of the best deals in the desert.

In the first three installments, we highlighted hotel deals off The Strip, the best dining deals for foodies, and the top entertainment for your buck. Now we look at what's new, hot, and happening this month in Sin City.

(1) City Center - Since this 76-acre complex was conceived in 2005, Vegas-ites have been bursting in anticipation of its opening like kids on Christmas Eve. Well, Santa is here. With the trifecta of the Vdara, Aria, and Mandarin Oriental hotels, plus the Liebskind and Rockwell-designed Crystals retail and entertainment complex, and even its own Elvis-themed Cirque du Soleil extravaganza, there's plenty of "new" to explore this month. Luckily, the hotels at City Center are doing their best to lure customers with attractive opening rates such as $174 for a suite at Vdara, or a buy-one-get-one-free stay at the Mandarin Oriental for $476 (including resort fees). Bonus: Going there in December exponentially improves your chances of a celeb encounter.

How to book: Go to City Center's Web site and click on the specific hotel you wish to book.

(2) Hard Rock Hotel & Casino - The behemoth construction site of City Center has overshadowed pretty much everything else in Vegas. However, just east of the hubbub, the Hard Rock Hotel has quietly raised a brand new all-suite tower opening December 29. The 374 suites range from 701 to a gigantic 4,300 square feet and come with all the modern day fixings you'd expect, except one: a high price tag. A stay on opening night will cost you $189; that drops to $111 (including taxes) if you're willing to wait until January 3. While there, check out Vanity, HRH's brand new and appropriately-named nightspot.

How to book: Reserve online or call the hotel at 702-693-5000.

(3) Beso Vegas -  Eva Longoria Parker, she of Desperate Housewives fame, spokesmodel for L'Oreal, and occasional restaurateur, is opening a Las Vegas outpost of her Hollywood restaurant Beso. Doors open December 3 for a celeb-studded gala, but you'll be able to dig into a 22 oz. tequila peppercorn ribeye ($54) or a chili rubbed skirt steak ($29) and Eva's tortilla soup ($10) on the 4th. Buen provecho!

How to book: Go through OpenTable.com
